You know I love a good protein filled snack, and no doubt you have heard me RAVE about Botanika Blends, my favourite, vegan plant protein full of digestive enzymes and probiotics. So naturally, I had to create my own protein ball recipe using my all time favourite flavour, Caramelised Popcorn!
If you already don’t know, a good protein source is the building block for promoting healthy muscle repair and body function. It also keeps you feeling nice and full!
It also tastes bloody delicious.
Make these on a Sunday so you have something sweet ready for when that sweet craving hits during the week!
You will need:

1/2 cup - protein powder (I use Botanika Blends Caramelised Popcorn)

1/3 cup - almond meal (you can opt to ground almonds in a food processor)

1 cup - granola (or any nuts/seeds/dried fruit)

1/3 cup - Rice malt syrup
-
3 tablespoons - Coconut oil
How to make it:

Mix all ingredients together in a mixing bowl

Roll into small balls
-
Roll in shredded coconut and refrigerate!

Serve!
