This recipe has been my absolute go-to these past few weeks (no surprise for there my Instagram followers!). I’ve been living off this Creamy Chicken Pie recipe for dinner lately and Tim absolutely loves it too! It’s so easy to make, requires minimal ingredients and is the perfect “meal prep” food that I can heat up the next day for lunch when I’m busy, which is such a bonus for me! A warm winter dish that’s delicious, easy to make and healthy!? That sounds like a winner to me… enjoy!
WHAT YOU’LL NEED:

4 potatoes, peel & chopped in 2cm cubes

2 brown onions, chopped finely

2 carrots, chopped into half moons

2 handfuls of spinach

3 cloves of garlic

400g of chicken thigh, cut into 2cm chunks

2 tbsp butter
-
2 tbsp milk
-
200ml cooking cream
-
chicken stock, 2 cubes
HOW TO MAKE IT:

Add potato to the saucepan of boiling water and cook until easily pierced with a knife (10-15mins). Drain water then add milk and butter and salt to the saucepan. Mash until smooth.

While potato is cooking, heat drizzle of olive oil on medium heat. Add chicken and cook for 4-5 minutes. Add onion and carrot. Cook, stirring until soft (6 mins). Add garlic and cook for 1 minute.

Reduce to low heat and add cooking cream and chicken stock. Cook, stirring until thickened (1-2 mins) Add spinach at last minute.

Preheat grill to high. Transfer chicken mixture to a medium baking tray and top with mashed potato. Run a fork through mash to create an uneven surface. Grill for 5-10mins.
