I have seen and tried so many sweet potato brownie recipes out there, but to be honest I have never really found one I LOVED... So after numerous attempts at my own, I have finally tweaked my Sweet Potato Brownie recipe just the right amount, and it tastes SO GOOD!! My recipe is also gluten free, dairy free, refined sugar free and vegan (provided you skip the honey option!)
You will need:

1 medium sweet potato, grated finely (roughly the size of my two fists together)

1/2 cup cacao powder

1/4 cup coconut oil

1/4 cup honey/ rice malt syrup

3 tbsp almond meal
-
2 tbsp pure maple syrup
-
1 tsp vanilla extract
-
2 tsp baking powder
How to make it:

Pre-heat the oven to 160’C.

Place all ingredients into a bowl, and combine well.

Spread mixture into a baking tin lined with baking paper.

Bake for approximately 20- 30 minutes as desired.

Remove from the oven and let sit for 5 minutes.
Option: Heat 1 tbsp peanut butter, 1 tbsp cocoa and 1 tbsp coconut oil and combine. Wait until brownies are cooled and drizzle over brownies.
Pro tip: Put brownies in fridge and wait until the next day to eat - I don’t know why but for some reason they always taste so much better!
